Sweet Potato Pie.

Ha, I tricked you.

You thought you were going to scroll down this post and see a giant casserole dish full of mashed up sweet potatoes, butter pools and marshmallow clouds.

Ha, you were wrong. I tricked you.

 

 

But hey, don’t feel too misled because this kind of sweet potato pie is way better than the other kind your Aunt Gerddy makes at Thanksgiving.

This sweet potato pie is simple, fresh, healthy and packed with flavor and nutrients. And in my opinion, it’s a perfectly acceptable option for breakfast, lunch or dinner. Three meal options, for the win. Eyyyyoohhhh!

 

 

You see all you do is bake a sweet potato in the oven or micro, sprinkle on some cinnamon, add a spoonful of black beans, salsa, sour cream [or greek yogurt], and then top it off with fresh cilantro and a little more cinnamon.

Sound weird? It’s not. Just try it. You will love it. It even led me to twittilate this the other day as I was eating it.

 

 

It was pure joy. My only regret is that I waited so long to try this combo. Why didn’t anyone tell me black beans + sweet potato = magic?!

John and I have been traveling abroad in the Kansas plains this week and plan to have a lay low type of weekend to recoup for the week ahead. Pizza Sunday, a Dog the Bounty Hunter marathon, and lots of photo recaps of our adventures are sure to ensue.

  1. Yum! My favorite way to eat a sweet potato is roasted, cut into rounds, and served with guacamole.

    Weekend plans = dance practice and packing for an upcoming trip.

  2. My favorite way to eat sweet potato is the unhealthy way. I make this awesome sweet potato pie (dessert not casserole) every thanksgiving. mmm…just thinking about it makes me wish it were thanksgiving. haha. I also love sweet potatoes and black beans, they are a match made in heaven!

  3. As oven fries: cut into match stick like fries with olive oil, cinnamon, cumin, nutmeg, seasoning salt and a little sugar. They cook fast and make the whole house smell awesome!

  4. Have fun in Kansas Dana! My fav sweet potato is baked with a bit of butter and salt…that’s it! I love it any way to be fair. This weekend is the Rapid City regional fair (sort of like a state fair but for this area) so I’m excited to take little bug to the petting zoo. 7.5 miles on Sunday followed by a breakfast picnic at the park! It’s gonna be a good weekend! have fun!

  5. I love black beans and sweet potato quesadillas. Heaven! Sprinkle a little cheese and it’s amazing.
