Typically, I wouldn’t put an egg anywhere near my oats.
Or a green onion.
Or spinach.
Or anything remotely salt, for that matter.
Normally, I like to keep my oats sweet with fruit, honey, chocolate and the like.
Read: I’m a sugar fiend.
However, sometimes, it’s good to try new things.
And so for the sake of branching out, I strayed from the sweet [gasp] and headed right to savory town.
And, it certainly didn’t disappoint.
When I started toying around with the idea of a savory version of oatmeal, my mind went straight to the basics:
eggs
onion
spinach
parmesan
So, that’s what I did. I stuck with the basics and kinda sorta hit a breakfast home run.
Although savory oats have a much different flavor than their sweet counterpart, they have the same thick, creamy texture that I love. And depending on how you make them, they can be incredibly healthy considering the healthy balance of carbs, veggies, fats and proteins they provide.
This, of course, is all besides the fact that they taste really, really good.
Savory Oats
Ingredients
scant 1/2 cup oats
1 cup water
1/4 cup milk
2 scallions, chopped
1/4 cup chopped fresh spinach
salt, pepper and garlic powder
parmesan cheese
1 egg
Method | Over medium heat, cook green onions in a dash of olive oil or cooking spray. Season lightly with salt and pepper and stir for a few minutes until the onions are soft. Then add spinach. Next add the oats and water and raise the heat so the mixture comes to a low boil. After another minute or so, lower heat slightly and add the milk and season again with salt, pepper and garlic powder. Once the mixture is creamy and thick, remove from the heat and add desired amount of parmesan cheese and stir [I added a couple Tablespoons]. In a serving bowl, add another small handful of chopped spinach and then add the oats. Then, add a cooked, seasoned egg [I prefer sunny side], and garnish with a few more sprinkles of fresh spinach.
Salty? Check.
Cheesy? Check.
Creamy? Check.
Hearty, healthy and delicious? Check, check and check.
The flavors meld together beautifully to create a dish that almost reminiscent of cheesy rice.
And with the runny egg on top each bite is a taste of farm fresh heaven.
Ahhh, breakfast. I didn’t think I could love you anymore than I already do. But it happened.

YUM! You may have just converted a sugary breakfast kind of girl to eat a savory meal tomorrow morning. I’m usually all about the sweet oats and things too, but this sounds wonderful. :D
I tried a savory oats once (long time ago), and it was pretty good. I love the idea of egg on top, though. Sort of a egg and grits (only oats, of course).
Mmm. that egg looks so good right now. I accidentally flipped my egg right onto the floor this morning, got frustrated, and went without it rather than cook another one. Poor start to a day, I’ll say, but since I’ve had copious amounts of coffee, things have seem to get better.

That’s the most appetizing bowl of savoury oats I’ve ever seen! It looks like the perfect healthy comfort breakfast.
I’m definitely trying this soon, probably with spinach and nutritional yeast!
I have been wanting to try my oatmeal in a different savory way just like you did… but I have always worried that it will gross me out & not eat it. I hate wasting food but this motivates me to try it next time.. it looks tastyyy!!
thanks Karen! I hope you try it and like it. Of course, as with all recipes, it’s all up to taste. But I’m kind of finnicky too AND hate wasting food and I really enjoyed this version! Just make sure you check the seasonings as you go along so you’re not surprised at the end :D
I kid you not, I had the same thing for dinner last night. We are like two peas in a pod. Or two oats in a bowl.

I’m going to admit… Savory oats scare me! They look so good, but I do love my sweet oats. I need to try this though – I can’t resist anything with a drippy egg on top :D
I’ve been eating savory oats just as much as sweet oats and I just LOVE them!!! I’m glad to know I’m not the only one – I’ve gotten pretty adventure with it :-)
I have NEVER eaten sweet oats. I call them ‘cookies in a bowl’. Sweets for breakfast have always turned me off….therefore, I didn’t start eating oats until I was almost 40 when I decided savory was the answer. I, typically, steam some stir-fry vegetables (zukes, squash, peppers, onions, bok choy, etc.) and stir them into my oats that have been seasoned with any of a number of spices or spice blends (Montreal Steak, Chicago Steak, cajun, poultry seasoning, etc.) or even made with canned tomatoes or Asian flavors (soy sauce/chili paste/garlic). All num, num, num!
Seriously, try it!

A favorite breakfast of mine before work. Your recipe is very similar to how I prepare it! Have you tried poaching the egg for the top? Killer.

This looks delicious! I’ve recently started having savory oats for lunch. I’ve been adding spinach, herbs, and a little drizzle of olive oil. The egg totally takes it to the next level though!
This is SO weird that I saw this post this today because this morning I tried my first bowl of savory oats! We think alike! I made mine with 1/2 c. rolled oats, 1.5 c. water, pinch salt, then when they were done stirred in ~1/3 c. chopped spinach, threw a slice of swiss cheese on top, then topped it with a fried egg! Unfortunately, I just didn’t like it that much! I’m thinking it may have been the swiss cheese? Either that or I was just missing my sweeter oats. Either way, I’m glad I tried it, but probably won’t again :(
Andrea, I hear you on this as I’m usually a sweet oats person, too. But I like the idea of savory oats because it introduces veggies, an alternate protein source to peanut butter [which I eat too much of], and weens me off my sweet tooth just a bit. I think I still prefer sweet oats but this rendition was pretty tasty. I look forward to experimenting more, though. Thanks for sharing!

yessss my absolute favorite breakfast. this is what i ate after my 16 mile run this morning– i was salivating just thinking about it the whole run. yummmmm.
I just tried this recipe, and it was delicious. I’ve never eaten savory oats before, but this made my husband an oats convert! I’ve never been a big sweets person, but have always made my oats with fruit. This might be my new go-to oats recipe. Thanks for sharing!

I have been waiting to get some fresh spinach left over for some time now, specifically to try this recipe. I wish I had gone out and bought some just for this recipe!!
I fanatically love oats of all kinds. I literally eat them at least 5 times a week for any meal. I make them with cinnamon-brownsugar, blueberries, bananas, strawberries, peaches, or honey and chopped nuts. However, my all time go-to favorite is oats simply made with water and salt, so I guess I’m kind of a savory fan at heart.
With the egg, parmesan, onion, and garlic….AMAZING!!! I’m probably going to eat this for dinner every night this week! You hit a HOME RUN :)
