This means two things:
1) My blog must be getting old. [Ewwwwww, aging…]
And 2) It’s time for cake! Yipee!
I hardly realized I was coming up on my 100th post until just a few days ago when I saw my “published” count at 98. Yikes!
This called for something special and I knew just the trick:
This girl’s a genius for coming up with both cupcake- AND cookie-for-one recipes. Hats off to you, friend! Bravo.
I followed her recipe closely with only a few modifications…
adapted from Chocolate Covered Katie
makes just one cupcake
3 Tbsp. all-purpose flour
dash of salt
1 Tbsp. canola oil
1 Tbsp. plus 1 tsp unsweetened almond milk
1/4 tsp vanilla extract
1/4 tsp baking powder
1 Tbsp. + 1 tsp. sugar
Directions: Preheat the oven to 330 degrees. Mix the ingredients and pour into an oiled (or sprayed) muffin pan. Smooth top of batter. Cook for 12-15ish minutes.

When you’re done with the mixing bowl, either lick it clean or use it to make your frosting in (or do both, like I did. You only turn 100 once, right?)
15 minutes later and post sun tan:
We have a little cupcake on our hands. Isn’t she cute?
But oops, she’s still naked. Onto the frosting!
I didn’t have the ingredients for Katie’s healthy frosting recipe, so I just made my own, adopted from my sugar cookie frosting recipe.
I didn’t have powdered sugar on hand so I made it in my coffee grinder.
20 seconds later, powdered sugar:
I mixed all my ingredients together and added a little food coloring just for fun. Then, I set it in the refrigerator to thicken up a little.
But, I quickly grew impatient and minutes later I was frosting up my little babycake with sunshine-colored frosting and a huge grin on my face. (note: I didn’t use all of the frosting.)
And what’s a celebration without sprinkles and a candle? Not a very good one, if you ask me.
