My 100th Post!

Oh Happy Day! It’s my 100th post!

This means two things:

1) My blog must be getting old. [Ewwwwww, aging…]

And 2) It’s time for cake! Yipee!

I hardly realized I was coming up on my 100th post until just a few days ago when I saw my “published” count at 98. Yikes!

This called for something special and I knew just the trick:

Katie’s Healthy Vegan Cupcake for One!

This girl’s a genius for coming up with both cupcake- AND cookie-for-one recipes. Hats off to you, friend! Bravo.

I followed her recipe closely with only a few modifications…

Single Lady Cupcake

adapted from Chocolate Covered Katie

makes just one cupcake

Ingredients:

3 Tbsp. all-purpose flour
dash of salt
1 Tbsp. canola oil
1 Tbsp. plus 1 tsp unsweetened almond milk
1/4 tsp vanilla extract
1/4 tsp baking powder
1 Tbsp. + 1 tsp. sugar

Directions: Preheat the oven to 330 degrees. Mix the ingredients and pour into an oiled (or sprayed) muffin pan. Smooth top of batter. Cook for 12-15ish minutes.

When you’re done with the mixing bowl, either lick it clean or use it to make your frosting in (or do both, like I did. You only turn 100 once, right?)

15 minutes later and post sun tan:

We have a little cupcake on our hands. Isn’t she cute?

But oops, she’s still naked. Onto the frosting!

I didn’t have the ingredients for Katie’s healthy frosting recipe, so I just made my own, adopted from my sugar cookie frosting recipe.

Dana’s Single Lady Frosting

  • 1/2 Tbsp. smart balance butter, softened.
  • 3 Tbsp. powdered sugar
  • Splash of vanilla extract
  • 1 Tbsp. almond milk (or more, as needed)

I didn’t have powdered sugar on hand so I made it in my coffee grinder.

20 seconds later, powdered sugar:

I mixed all my ingredients together and added a little food coloring just for fun. Then, I set it in the refrigerator to thicken up a little.

But, I quickly grew impatient and minutes later I was frosting up my little babycake with sunshine-colored frosting and a huge grin on my face. (note: I didn’t use all of the frosting.)

And what’s a celebration without sprinkles and a candle? Not a very good one, if you ask me.

Happy 100th post to me, happy 100th post to me…

Alright, that’s enough pictures. Blow out the dang candle. I’m hungry!

Don’t worry, the candle was licked clean.

Ooooh, so good.

  4. Thanks for sharing the recipe! I tried making a personal chocolate cake from a different recipe and it came out spongey. I’m hoping this one will be more traditional!

    • Bummer : ( I’ve not tried to make a single-serving chocolate cake yet, but when I do hopefully mine doesn’t turn out spongey.

    So I’ve been catching up on your blog… and here are my thoughts.

    The Life Aquatic is awesome and Husband snuck me in to see it when I was younger. Wow…

    Coconut and chocolate IN A PANCAKE is genius. Even if it wasn’t a pancake, still genius.

    You and your green smoothies… makes me nervous… :)

    Lastly, that workout = no fun. :( Boo. It is my day of rest. I’ve avoided el exercise-oh!

    • Thanks! I had only done it once before but and admittedly it’s not as good as boxed powdered sugar, but it works in a pinch.
