Well hello there little cakes. Are you looking for a home? In my belly? Yes, I think you are. That’s why I ate you, with ice cream, in sheer delight.
We had friends over for dinner last Friday and I wanted to make us dessert. That afternoon I ran across Diana’s cakes for one recipes and thought ’bingo, that’s it.’ The rest is history.
These little cakes are culinary gems. They require few ingredients, take about 30 minutes to make, and are the perfect small-portion dessert to split with friends.
Plus, they have their own small batch frosting recipes so you don’t have gobs of ganache and buttercream sitting around the house just staring at you, beckoning to be devoured.
I split these cakes between the 4 of us and served them up with a scoop of chocolate chip cookie dough ice cream. Everybody got their own little corner of each and after sampling, we were all very pleased – especially with the vanilla! It was a favorite.
As for the recipes, I followed this one for the chocolate, only I subbed 1.5 T of real sugar for sucanat, and subbed lemon juice for vinegar. And for the vanilla, I followed this one, subbing 1.5 T sugar for sucanat again, subbing vanilla soy milk for coconut milk in both the cake and the frosting, and adding 1/4 tsp cinnamon to the cake.
The result was two incredibly moist, delicious, flavorful cakes that were a hit with our friends. I’m definitely bookmarking these for future get togethers and hardcore dessert cravings. Hope you enjoy!

Favorite cake flavor: german chocolate! With a rich german chocolate frosting, complete with walnuts and coconut. Mmmm…

Fudgey, dense yet light, brownie-style cake with chocolate frosting (vegan, of course). I also adore lemon ice-box cake. Oh, birthday cakes! And carrot cake (no nuts)! And cranberry orange coffe cake is so blissfull! Ah, and how I go crazy over maple cake with a creamy maple “butter-cream” frosting.

Fave cake?? How do I pick just one? Carrot or Red Velvet are right up there…but I think that’s just because I LOVE Cream Cheese frosting.
I’m a cake fan in general, but there’s something so delightful about yellow cake with chocolate frosting! With ice cream, of course
